Coconut Popcorn

There is nothing quite like a nice big bowl of popcorn during a movie, but on the AIP, there is no such pleasure! However, we quickly discovered that cubing and roasting fresh coconut yields a super tasty alternative! And oddly enough, it actually DOES have a popcorn-y taste!!! 



Easy to make, yummy to eat, the perfect snack!





Coconut Popcorn

  • 2 fresh Coconuts (husked)
  • 1 Tablespoon of Coconut Oil (bacon grease is also a superb alternative!!)
  • Salt (to taste)
  1. Chop coconut into tiny cubes
  2. Put a cast iron skillet over medium heat, and add oil.
  3. Toss the coconut into the pan and stir occasionally for around 30 minutes until nicely toasted.
  4. Sprinkle with salt to taste and dish it out!
  5. Revel in the fact that you now get to enjoy delicious coconut popcorn! 

Note: we usually put in about 1/4 to 1/2 teaspoon of salt
