Creativity in the Kitchen

Creativity in the kitchen is the one thing that keeps me going. Because what fun would it be if there were no obstacles?! If you hand me a recipe, I will have no desire to create it. But if you simply ask "Kaley, would you make us some pie" then that opens a whole new bubble of creativity! How should I make the crust? What type of filling can I do? Shall I make a jam or a smooth creamy filling? Bonus points if it not only has to be paleo, but AIP and starch free as well!

AIP Pesto

Sauces are definitely one of my soft spots! If I could always have one thing on hand, it would be a never ending supply of sauces in my refrigerator! They can liven up some cooked veggies, be spooned onto meat, and can be slathered on crispy plantain chips! There is a never ending need for them, but sadly they are one of the toughest things to make on the AIP. 


As me and my family continue to figure out new intolerance and sensitivities, it makes it nearly impossible to find a suitable sauce. With not being able to use vinegar, nutritional yeast, sweet potato, and fish sauce, there is barely anything left to use to create something yummy to drown our food in.


Until now. *cue dramatic music*

EVEN MORE Exciting News!

As some of you know, The Paleo Mom (Dr. Sarah Ballantyne) has recently come out with an incredible collagen veggie blend that combines 11 different fruits and veggies with gut-healing collagen to create a healthy protein powder that stirs into water to create an incredibly healthy smoothie! It is GREAT for a quick meal on the go, or adding to recipes to add some sneaky veggies!

In April, The Paleo Mom announced a recipe contest! Anyone and everyone was allowed to participate and the goal was to create a unique/fun recipe using this new protein powder! 

So, I got to work! After countless failed batches of several different ideas, I perfected THREE recipes to be submitted! I was so excited! As the deadline for submissions came (June 1st), mom helped me with some awesome photos and I wrote up the recipes!

Fast forward to yesterday, and the finalists were chosen! 

As I scrolled through The Paleo Mom's announcement, I realized that I recognized one of the finalist's pictures...It was a picture of MY RECIPE! 

I squealed and did a happy dance!! I could hardly believe it!! 






GUYS, CAN YOU even believe that I am a finalist??!!? I am so happy!!

The Paleo Approach Exciting News!

Hey everyone! The Paleo Mom (Dr. Sarah Ballantyne) has just announced a FABULOUS sale on her first book The Paleo Approach! This book is chock full of the science and reasoning behind the AIP. I have read this book several times, cover to cover and the depth and proof of the science behind EVERY dietary change recommended when following the AIP, is laid out beautifully! She helps us understand both how our bodies work, as well as how they react with different compounds found in food! Not only that, she goes through several lifestyle factors and explains how they all can affect autoimmunity in the body! This is a fabulous book for anyone who is curious behind the "whys" of clean eating!


Summertime Pink Lemonade

Nothing screams summer vacation like homemade strawberry lemonade! With its pretty pink hue, and tart freshness, it is the PERFECT refreshment for any summer day! I mean look at it! Gorgeous! To get the deep color and delicious strawberry flavor, I simmer it over the stove and then chill it! The result is a truly fabulous pink lemonade!

Decadent "Chocolate Cake" Waffles

I can't think of a better way to start my summer break than with a large stack of waffles...that taste JUST like chocolate cake! Not to mention the fact that THESE waffles have ELEVEN different fruits and vegetables cram-packed inside! A perfect way to start your day! Thanks to the AMAZING new Collagen Veggie Blend that was recently launched by The Paleo Mom (Dr. Sarah Ballantyne), it is super easy to incorporate extra healthiness into our diets! This powder has several veggies such as kale,  broccoli, and carrots, as well as several antioxidant fruits like blueberry, cranberry, and strawberry! Not to mention the gut-healing collagen peptides! Thanks to the smart-thinking of The Paleo Mom, the powder isn't very sweet, which allows the consumer to sweeten it up to their own liking! Paleo Sandwich Bread (AIP + egg)

Tomorrow we get to go on an adventure! We will be heading to Paso de Cortez, which is a super cool area between the active volcano and the group of mountains! We always have so much fun riding horses, hiking, and exploring the waterfalls! We spend much of the day there and it is always a good idea to pack a lunch! Usually we pack things like raw veggies (think carrots or cucumbers), fruit (like oranges and apples), and AIP meat sticks. However, this go 'round I kind of wanted a REAL picnic lunch. Something along the lines of a sandwich...or maybe some egg salad. So that is what I set out to accomplish...

Lookout world! These tweeny bars are going to take you back to a time in which you could actually eat TWIX! They are one of my proudest creations! These bars are somewhere between a twix candy bar and samoa cookies...let that sink in for a minute...sign me up! Even my dad who eats a fairly normal diet LOVED these and once he took a bite, he said "Kaley! Wow! Is this an original recipe?!"Yes sir, it was all this gal!

AIP Lemon Cream Pie

Yesterday I got the baking bug. I had been wanting to make a pie so I decided to go for it! Thank goodness I did! I was originally going to make a strawberry pie, but then I walked into the kitchen and a large bag of gorgeous lemons stared at me from the fruit basket. I gave in to their promise of a sweet and tangy dessert! I could't resist!

AIP "Chocolate" Fig Cookies

Recently I discovered my new love for figs! Once upon a time I tried raw figs but to me, they tasted like a dry, slightly fruity cucumber. And who knows, maybe the one I had wasn't quite ripe...either way, I wasn't a fan. Fast forward a bit and I discovered our Costco got a new shipment of dried fruit; figs! They looked SOOO good so we decided to buy some! Oh goodness...my heart warmed when I tasted the sweet, chewy, and lovely fruit! They were almost like a raisin but WAAAY more delicious! And, I was glad to have them as a replacement as I can no longer have raisins (see why). I couldn't wait to try out some recipes with these new nuggets of goodness!

This bread is simply FABULOUS! I have made it EVERY SINGLE DAY this week! It is SO incredibly tasty and won’t take more than 8 minutes of your time! The egg + baking soda + cream of tartar combo makes the most fluffy and delicious bread ever! While the batter is in the pan, you can LITERALLY watch it grow! It expands like crazy!

This Journey

This whole journey is SO much MORE than just a “health food fad”. I didn’t give up ALL of my favorite foods just so I could brag that I was being “healthy”. No, I am doing this for me! I started this whole thing for ONE thing and ONE thing only and that was to cure my eczema. I succeeded! However, as I dove further into the realm of “health”, I learned how my body REALLY works, what it REALLY needs to thrive, and how I can accomplish REAL health. It intrigued me. Before this whole thing, I would roll my eyes at all the health stuff. Who even cares?! But I discovered the incredible awesomeness in the discipline and possibilities of being happy and healthy.

The Seasons

It amazes me how quickly the seasons of life will change. One moment you are just sitting there, wishing for SOMETHING, ANYTHING to happen that is not your usual routine. The next moment you sit in that same spot and blink as you try to fathom all the things that have changed and the perspectives that we have collected. Almost as if to say “has this ALL really just happened?!” We live in an age with indescribable progress in technology and knowledge, yet sometimes I wonder how my life became so boring. We must remember to never allow ourselves to become stagnant. We must never just live, because we have to. We must live with passion, with hope, and with joy.

AIP Peanut Butter Cups

The name of this post is kind of ironic seeing as how the recipe contains neither peanut butter nor chocolate. Well, I have decided to name it that anyway! You see, the coconut butter with honey and vanilla makes the filling taste almost nutty and the carob cream makes the whole thing a chocolate-y experience! I am NOT guaranteeing that this is as good as Reese's but I AM saying that if you are following the AIP, that these will make your eyes roll in approval!

As Christmas time approached, I struggled to think of something that my mom would ACTUALLY  like. I then had the epiphany that coconut butter was one thing that she enjoyed! Like, REALLY enjoys! So, that week we went shopping and I got 3 fresh coconuts. Which, wasn't out of the ordinary, I make my own coconut milk and I also dehydrate coconut for a snack. However, I was a tad concerned that when 3 coconuts simply *disappear* that she would notice! Thankfully, she didn't give it a second thought! One afternoon I was left behind from our weekly shopping trip to do school but instead, I whipped up some coconut butter. I added a little bit of this, and a little bit of that. Pretty soon, I tasted the concoction and my eyes bulged out. "WOAH" I said to myself, "This tastes JUST like cookie dough!" This would be PERFECT!

Sulfite Breakthrough!

Sulfite...What? If you had asked me two days ago what sulfites were, I would have given you a blank stare. Maybe it has something to do with vinegar...hmm. Well, yesterday as I was contemplating why on earth I had reacted to foods that were normally a part of my diet, when my mom suggested maybe it had something to do with sulfites (NOT sulFATE). We had eaten a meal a day prior that was smothered in balsamic vinegar and had veggies that were cooked in a white wine sauce. I was skeptical but I decided to look it up anyways. I figured a little research never hurt anyone ;) What I found was shocking!

AIP Date Balls

Sometimes, you just need a date ball! And sometimes, you just need something sweet. Other times, you just want something that you can throw in a blender and have AMAZING DATE DOUGH pop back out! Because these delicious balls of goodness are no bake, you can have a pile of goodness before you can even say the words "THESE DATE BALLS ARE THE BOMB". Yup, its true ;)
