My Take on AIP Pear and Ginger Muffins

These muffins are THE BOMB! They are not extremely visually pleasing but let me tell you, they sure please the taste buds! Even my Dad who eats a normal diet wanted another! Pears are in season here and so I wanted to make something with the ones that were sitting on the counter going bad. These muffins had to cook for longer than I expected but the outcome is totally worth it! They are best warm, whether straight from the oven or heated in the microwave!

AIP Pear and Ginger Muffins

  • 3 cups of roughly chopped pear (2-3 pears)
  • 5 Tablespoons of coconut flour
  • 4 Tablespoons of plantain flour
  • 1/4 teaspoon of vanilla
  • pinch of salt
  • 1/4 teaspoon of powdered ginger
  • 1 teaspoon of honey
  • 1/4 teaspoon of baking soda
  • 1/2 teaspoon of cream of tartar
  1. Puree the pears in a food processor until smooth. (Also, preheat the oven to 375*)
  1. Add the coconut flour, plantain flour, vanilla, salt, ginger, and honey and then pulse to combine.
  1. Then, put the baking soda and cream of tartar in and pulse to mix. 
  1. Put in mini muffin tins and bake for about 33 minutes. 
  1. Let cool a little and enjoy them warm!
