Naner Nuggets!

I present to you: Naner Nuggets! These little nuggets of goodness can be made using waaaay overripe bananas which is great for when you find that you have some going bad but don't know what to do with them! They are made with banana and coconut which makes them very filling and satisfy the craving for a quick snack! They are fairly easy to make and super delicious! 










Naner Nuggets:
  • 4 overripe bananas
  • 1 1/2 cups of unsweetened coconut shreds
  • pinch of cinnamon (optional and delicious!)
  1. Place the banana and coconut into a food processor and combine until there are no more large chunks
  1. Prepare a dehydrator tray by putting a piece of parchment on to prevent the mixture from falling through the mesh
  1. Put the "batter" into a sandwich size baggie and cut one of the corners off
  1. Make one inch "nuggets" by squeezing the batter out of the baggie
  1. Turn the dehydrator on and set the temperature to 130 degrees and dehydrate for about 5 hours (depends on how thick your nuggets are)
  1. Test to see if the nuggets are ready; they should come off of the parchment fairly easily and be slightly moist on the bottom (do NOT let them get crunchy! They should be chewy and tender!)
  1. Flip the nuggets over and dry for 10 more minutes to make sure that the bottom is fully dry (you may have to taste test just to make sure they are fully dry!)
  1. Let cool for about 20 minutes and then place them into a baggie and shake with a pinch of cinnamon
  1. Store in an airtight container
Side Note: This recipe makes about one tray of nuggets (about 50 pieces) and can easily be halved or doubled.
